The exceptionally sharp conical ground edge, hand-sharpened to a 16-degree angle, is long-lasting and easy to maintain. The blades are crafted from High-Carbon German stainless steel and heat-treated for hardness to resist stains and corrosion.

The knives are suitable for delicate and thick cuts. Thicker meats like fish, beef, or pork require a less flexible knife for proper deboning, but the knife's slight flexibility allows for a delicate touch. The curved but semi-rigid blade provides a better working angle when cutting near and around bone. (We do not recommend using these knives to cut beef bones.)

Furthermore, the handle is made of sandalwood for a comfortable grip and easy handling. This particular knife is weighted and balanced with triple-shank rivets for maximum durability.
